Quick, nourishing and delicious. I threw this pasta together in 10 minutes.
With ingredients to boost gut diversity, balance hormones (happy oestrogen thanks to leafy greens) and full of flavour. Enjoy! Serves 2.
Ingredients
125g of pasta of your choice
300g of prawns
1/4 cup of chopped sun dried tomatoes
3 portions of frozen spinach - I use Woolworths Macro Organic
3 portions of frozen kale - I use Woolworths Macro Organic
3 cloves of fresh garlic
dried basil, to taste - I use about a teaspoon
dried chilli flakes, to taste
1 tablespoon of bone broth - I use Best of the Bone
100-150ml of cooking cream
parmesan cheese, to taste
extra virgin olive oil
Method
Pre heat your stainless steel or other toxin free pan and put a pot of water (filtered if you have it) on to boil as per your pasta instructions
When the water is boiling, pop your pasta on to cook
While the pasta is cooking, defrost your frozen greens for about 1 minute in the microwave and strain out any excess water, chop up your sun dried tomatoes, peel your garlic, chop up your prawns and grate your parmesan
In your pan, add the sun dried tomatoes, greens, prawns, crush in your garlic, sprinkle your basil and chilli flakes and stir through for 5 or so minutes or until the prawns are cooked through
Check and drain your pasta and add to your pan and combine
Add in you bone broth and cream and stir through the dish
Split between two bowls and top with a sprinkle of parmesan and enjoy
