These are quick and easy to make and incredibly delicious!
They are gluten free and dairy free so great for anyone experiencing those intolerances.
They hit the hunger spot when you're on the run and are a great pre and post workout snack. Enjoy!

1 cup of quinoa flakes
1 cup of pitted, softened dates
1-1.5 cups of natural peanut butter
1 tbsp white chia seeds
1 tbsp natural, unflavoured protein powder
1 tbsp desiccated coconut
extra desiccated coconut for rolling
1. soften the dates in water, ideally this would be a day or two beforehand, but if you're time poor then boiling water and a few hours of softening will do
2. place all the ingredients into a food processor or thermomix and combine well until the consistency ends up being quite sticky and thick
3. roll into balls to your desired size and then roll through the extra desiccated coconut to coat
4. place them in the freezer for 20-30 minutes to solidify them and firm them up and then pop them in the fridge to store
