Golden Chilli Salmon - delish! xx

Hey beautiful followers,

 

On Sunday morning I woke up with a sweet tooth craving and of course wanting to keep my meals healthy and nutritious I made this great option for dinner with all the health benefits of green vegetables, good fats and omega rich salmon with a sweet twist. A great meal to keep it clean when you're craving and avoid hitting the chocolate after dinner. Enjoy!

Golden Chilli Salmon

 

Ingredients

 

- 2 pieces of salmon 

- 1 small bottle of sweet chilli sauce - organic if you can find it, otherwise Trident is a great alternative using the most natural ingredients

- 1 dessert spoon golden syrup

- 1 bunch of bok choy

- 1 capsicum - colour of your choosing

- 1 bunch of broccolini

- olive oil or coconut oil for cooking

 

Method

 

1. Place the salmon in a plastic zip lock bag and add the chilli sauce and golden syrup massaging in into the fish to marinate. If you can manage to do this a few hours before the salmon tastes even more delicious after the marinade has spent afew hours soaking into the salmon

 

2. Cut up your veggies and place them into a wooden steamer over a pot of boiling water. Cook unitl the veggies have gone bright green or for no longer than 10 minutes (in order to keep the nutrtional value of the greens)

 

3. While the greeens are cooking, place the olive or coconut oil in the pan over medium heat and add the salmon until cooked through. The marinade will solidify a little and make a yummy caramelized sauce 

 

4. Plate the veggies up, add the salmon in chunky pieces to the top and spoon the caramelized sauce over the dish

 

5. Eat and enjoy! xx
