Fig, Pistachio and Walnut Granola

Breakfast is by far my favourite meal of the day but with my early morning work schedule it is really hard to find easy, delicious and healthy brekky ideas that you can eat on the go. I love to cook and this is one of my really quick and easy granola recipes (I'm working on a few) that I make for my weekday brekky's.

1 cup shelled pistachios

1 cup walnuts, roughly chopped

1 cup dried figs roughly chopped

1/2 cup sliced almonds

1 cup quinoa flakes

1 cup coconut flakes (you can use shredded but the flakes are better)

1/2 cup pepitas

1 teaspoon white chia seeds

1 teaspoon black chia seeds

50-75g melted butter - depending on taste

Organic ingredients if you can manage but still healthy and yummy if they're not.

 

1. Set your oven to 150 degrees celsius - it only takes 6 - 10 minutes to cook. Bake it longer if you like it crunchier and vice versa

2. Put all the dry ingredients in a big mixing bowl

3. Melt your desired amount of butter in the microwave or over the stove and then pour the butter over the mixture and stir in with a wooden spoon

4. Place mixture on lined baking tray and smooth it out so it covers the entire tray

5. Pop it in the oven and check it in about 3 minutes and give it a stir around if you need too

6. Pull it out of the oven when it had reached your desired crispness and enjoy with milk or yoghurt and berries if you want a little more sweetness xx
